Mini fish patties with celery – thin couscous• 2 cups cooked Giant Israeli couscous (250g uncooked Giant Israeli couscous)
300 g Nile fish
200 g cod (clean)
1 onion
1/2 parsley
1 egg
1/2 cup bread crumbs
2 tablespoons Oil
1 celery
5-6 cloves of garlic
Preserved lemon
Spices: 1/2 teaspoon cumin, 1/2 teaspoon white pepper, 1 teaspoon turmeric, 1/2 teaspoon ground black pepper, salt
Directions
- In a wide bowl mix 1 liter of water and 1 teaspoon salt. Soak the fish for 1/2 hour
- Empty the water and wash the fish carefully.
- Using a food grinder, grind the fishes together with onion and parsley.
- in a bowls mix egg, breadcrumbs, cumin spices, oil, white pepper and salt.
- place in the refrigerator for an hour to combine spices.
- wash the celery, and cut to a length of 10 cm (including leaves, stems)
- Place in a saucepan with the garlic cloves, lemon and season with turmeric and ground black pepper.
- Add water and boil for about 15 minutes,
- Roll small patties from the mixture and place in the pot on the celery cover.
- Cooks until the liquids are reduce (about 25 minutes)
- Meanwhile, Boil water and cook couscous according to instruction, about 7-9 minutes.
- Place patties and sauce on a thin couscous and serve hot.
